We wanted a high protein vegetarian lasagna that was just as filling and satisfying as the traditional version. This dish is packed with flavor, texture, and nourishing ingredients.

Ingredients:

  • 1 large organic zucchini, chopped
  • 1 medium organic red onion, chopped
  • ¼ teaspoon salt
  • 8 organic white mushrooms chopped 
  • 10 organic broccoli florets chopped 
  • 3 tablespoons extra-virgin olive oil (you can also use the olive oil spray or avocado oil)
  • 1/2 clove garlic, pressed or minced
  •  lasagna noodles Jovial gluten-free
  •  8 ounces (2 cups) freshly grated low-moisture, part-skim mozzarella cheese
  • 16 ounces 2 (cups of ricotta) (to make vegan use vegan plant based cheeses)
  • 20 ounces of Roa's Vodka Sauce (use whatever you like- this is what we prefer)
  • grated parmesan (whatever you desire) 
  • pack of Abbot's plant protein "beef"

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. To prepare the veggies: In a large skillet over medium heat, warm the olive oil or avocado oil. Once hot, add the onions, zucchini, mushrooms, broccoli and salt. Cook, stirring every couple of minutes.
  3. Heat up the veggie protein "beef" and add any extra herbs that you desire. We think that it is nicely seasoned already but everyones taste preferences are different.
  4. Spread ½ cup tomato sauce evenly over the bottom of a 9” by 9” baking dish. Layer 3 lasagna noodles on top. Spread a layer of ricotta cheese evenly over the noodles. Top with your sauce, then add the veggie protein "beef" and a layer of veggies along with  ½ cup shredded cheese on top.
  5. Continue with another layer. - Top with noodles and repeat the step before.
  6.  Sprinkle evenly with 1 cup shredded cheese on the very top.
  7. We do not cover ours in the oven but you can if you like. Bake for 20 minutes, then rotate the dish and continue cooking for about 12 to 15 more minutes, until the top is turning brown. Everyone's oven is calibrated differently so this may not work exactly for your oven. Be sure to check in on it every 10 minutes.
  8. Remove from oven and let the lasagna cool for 15 minutes. Once it has time to set and cool down to a reasonable temperature DEVOUR!
